Almond Milk

Although there are many recipes, this is a simple version that I like.

  • Soak one cup of raw almonds into the blender glass with three cups of drinking water over the night*
  • Next morning blend in super-fast speed for few seconds and pour it on a cotton cloth (for paneer) to squeeze.
  • Squeeze good the milk into a bowl, the solid residual can serve to mix with Muesli or fruits**
  • Use a fine-strain (metal coffee cone is good)  to make it more creamy, just pour it through and press at the end.
  • If is too thick then use a little bit more of water, but remember to keep a milk-like consistency.
  • Let it 24 hour in the fridge, after that you can shake it, to mix the cream with the liquid and its ready for use. 
  • You can put some sweetener if you like.

Remember to offer it, and smile while drinking a nice healthy almond milk.

*you can make more milk by multiplying this measure.
**you can also use it for granola bars or anything that you can imagine.

Collard green wrap

A staple at our home/very versatile.


This consists of pate, a collard green leaf and your favourite salad.


Any form of raw pate will do for this: This is for sunflower:


3 cups sunflower seeds soaked 8 hours, sprouted 3 hours; 1 cup lemon juice; 1/3 cup raw tahini; 1/4 cup liquid aminos or nama shoyu; 4-6 btablespoons coarsely chopped parsley; a dash of cayenne pepper (not too much) a small piece of ginger (about 1 ounce); 1 teaspoon ground cumin. 1/4 teaspoon hing; grind all ingredients in a food processor until it acquires the texture of pate. you can add a salad or salad ingredients and make a wrap with a collard green leaf (or if the leaf is too small to wrap, you can make a collard green taco).


You can wrap in a lettuce leaf as well.
